Frequently asked questions for your catering event!
This is a great place to start if you have never had our company cater your event.
Once you have looked at our catering menu on the top tab (Catering Menu) and have looked over all your options
you can then give us a call at 503-522-4012 and begin the booking process. We will need the following information regarding your event:
Your company's name or the name the event will be under.
The contact person's phone number and address
The contact person's email so we can send the invoice for them to look over.
The contact person's cell phone number at the event just in case we have last minute questions or need more instructions to the location. Please make sure you give us the right address! We use GPS, so a mailing address works best. No PO BOX address please!
Date of your event.
How many guest you will be having us serve.
The menu Items you will want to serve your guests.
The time you want your guest to be served.
Let us know if you would like this event to be an on site catering or your order just dropped off or picked up. For guest of more than 50 it's best to have it catered so that the food will be kept at safe temperatures.
Here is the scenerio when booking a catering with us:
When you call us we take down your information and menu choices and book you on an availble date if it is open on our calendar, We then email you a invoice to look over for your approval, Once you have look your invoice over you call us back with your method of down payment and we then book you for this date, One week prior to your event you call us back with the final head count and final payment. On the day of the event we arrive about one hour before your event and we begin to set up the food on your buffet tables and start serving at the time you set for your guest to eat. Once your guest have all gone threw the buffet line and looks like everyone is done, We then quietly place the food pans on your table and add disposable spoons and tongs so for those who might want to keep eating can do so. At your request we can bring togo containers so you can offer your guest to take what ever is left home or you can pack it up for your own use. We charge 25 cents per container just let us know how many you would like for us to bring. We have found that in the past when we leave quietly as possible your guest don't feel like they need to leave and the party is over.

Q. What about permits or fee's?
A. You are responsible for finding out and obtaining all permits, fee's or similar, at your own cost, required for your event. This may include but is not limited to parking permits, park usage and similar.
A copy of the park and parking Permit and fee must be provided to Big Kahuna's BBQ & Catering one week prior to the event.
Q. Do you bring tables or chairs to the event?
A. No, you can call a rental company to bring you tents, chairs and tables. We can recommend companies if needed.
Q. Do you supply plastic table cover for the buffet table, Paper plates, napkins, forks, knives salt, pepper and wet naps?
A. YES! If you wish to supply your own we do not discount the price.
Q. What happens to the left over food if there is any?
A. If there is any left over food it will be yours to do what you wish. Please let us know if you would like for us to bring togo containers, there will be a 25 cent charge per container.
Q. Why is there a Non refundable date charge?
A. When we book a catering date and time with you we turn down other customers.
Q. Is the gratuity added to the invoice?
A. you will see a gratuity when you order an on site catering, If you order a drop off there will be a delivery fee and if you just plan on picking up your order there is no charge for that.
Q. How do you plan to charge when we have kids in our event?
A. Children under the age of 12 are be counted 3 to 1 adult. Young adults from 13 and older count as one adult.
Q. Can we bring side dishes to the event?
A. As long as you sign a waiver releasing us of any harm to a person from any food Item at this event.
Q. Can we provide you with the meat for you to cook at our event?
A. No, our Insurance company will not alow this, nor will the Health Department under our restaurant license.
Q. What time do you arrive at the event?
A. We arrive about one hour before the event unless you need us there sooner.
Q. When cooking a whole pig will you cook it in the ground?
A. No, our Insurance company will not alow this, nor will the Health Department under our restaurant license.
Q. How is the pig cooked? Can we see the pig bing cooked?
A. We cook our whole pigs and other meats in a custom made BBQ trailer pit. Whole pigs, cook for at least 12 to 18 hours depending on the size of the meat. Our pits are closed off set smokers making it hard to see when your cooking.
